STYLE: Subtle, agile with a lively personality. With our interpretation of Burgundy varietals, we always try to show the finesse and elegance that our Blauer Burgunder has to offer. A cool freshness dominates its texture and earthy tones with hints of juicy red berries its aroma profile. At least at the beginning. Over the years our Blauer Burgunder has experienced surprising metamorphoses which have constantly uncovered notes of the forest: mushrooms, game and also, dark cherries and pepper. The tannins are soft, complimented by a defined acidity. Both depth and flow united. VINIFICATION: Harvested by hand, in 25kg boxes. Destemmed berries are crushed and then mash fermented between 7 and 14 days. Spontaneous fermentation, no temperature control. To extract sufficient aroma, colour and tannins, slowly rotating paddles push the mash down twice a day 5 minutes long. The wine develops calmly on its full-lees in stainless steel for 12 months and matures an additional year in stainless steel without further intervention. Roughly filtered.
