Loess. Planted with various blooming herbs and clover types to promote biodiversity and soil organisms (earthworms).
Vinification
De-stemmed, 6 hours of maceration with moderate must oxidization, temperature-controlled fermentation in stainless steel vats (19-21°C); left on its lees for 4 months; not filtered before bottling.
