Vineyard: Ried Hoher Weg
The single vineyard “Hoher Weg” (high path) leads over the hump of Johannesbergen. Since the wind is almost always blowing up here, the grapes dry quickly in the morning. Botrytis doesn’t stand a chance, grape ingredients become concentrated. We do not harvest until the grapes are deeply mature.
Vinification
De-stemmed, 12 hours of maceration with moderate must oxidization, fermentation at room-temperature in traditional 600-liter oak barrels; left on its lees until end of August 2020; not filtered before bottling.

Hot Asian dishes. Veal, rabbit; dishes with strong sauces.
